The Asado Gaucho 1200 is inspired by the traditional South American Asado grill, offering a completely unique way to cook food. The process involves burning pieces of wood in a firebox, which then turns into charcoal that is transferred to the grill to begin cooking.

Asado grilling is most prominent in Argentina, and it is truly a distinctive method of grilling meat. It is the perfect grill for real grilling enthusiasts, whether you're a grill master or a grill queen.

Asado Gaucho 1200

Crafted by the brand Omberg, this grill is made from high-quality stainless steel (304-grade throughout) and features fire-resistant brick surrounding the grill. The design is open, with adjustable, V-shaped grill grates that allow fat from your food to drain easily. The fat flows down the grates into a removable drip tray at the front, which can be easily lifted for cleaning.

You can adjust the height of the grates using a large side wheel, allowing you to grill closer to the heat for intense cooking or further away for slower grilling. There is also a safety lock that you can release to adjust the grates smoothly.

Wood or Charcoal Cooking

The side wood basket is designed for burning the wood, and the embers and ash fall through the grate, forming a perfect bed of coals underneath. This coal bed can then be slid under the grill grates to begin cooking.

The front lid opens, giving you easier access to the base of the grill, making the coal placement process straightforward. Creating a substantial coal bed may take time, so you may want to add extra charcoal to the existing bed for better coverage.

Cooking with Tradition

Asado, meaning "to grill" or "barbecue" in Spanish, is similar to American-style barbecues but originates from South America, particularly Argentina. It focuses on cooking over an open fire and, importantly, is a social occasion shared with family and friends over a meal.

Asado often centers on meat, which is cooked slowly at lower temperatures to enhance flavor, using either wood or charcoal.

There are typically two primary methods of Asado grilling:

  • Al Asador – Cooking an entire animal over an open fire, either on the ground or in a fire pit.
  • A la Parrilla – Grilling in a height-adjustable South American grill (Parrilla) with a section (brassero) to prepare the wood or charcoal.

Omberg’s Asado series is a type of Parrilla grill, featuring height-adjustable grates that allow for both indirect and direct grilling. You can adjust the grates closer to the coal bed for higher heat or further away for a gentler cooking process. The grill also comes with a brassero to help you get the perfect fire going before transferring the coals to the grilling area.

This South American-style grill offers excellent cooking versatility. It provides a large cooking surface for preparing substantial meals, and you can also grill with rotating skewers or a rotisserie (sold separately). Heavy-duty meat hooks are also available as accessories, enabling new cooking techniques or expanding the grilling space further.
