Slow Cook Over Live Fire on the Asado Gaucho

This rotisserie spit fits the Asado Gaucho 1200, 1000, 800 and XL. It mounts to the grill frame and positions a rotating spit at the correct height above your charcoal or wood ember bed. The rotation keeps the meat moving through the heat zone continuously, cooking all sides evenly without constant attention. Fat renders and bastes the surface as the joint turns.

You manage the temperature the same way you do for everything else on the Asado Gaucho: by adjusting the brasero to bring embers closer to or further from the spit.

What Cooks Well on the Rotisserie

Whole chicken is the most practical starting point. A medium bird takes around 90 minutes over a moderate ember bed and comes off with properly rendered skin and juicy meat throughout. Leg of lamb is another strong choice: the fat renders slowly, the outside develops a crust, and the inside stays pink. Rolled pork belly holds its shape well on the spit and builds a good crackling over a hotter fire.

For larger sessions, you can run the rotisserie over the main grate area while keeping the brasero shelf active on the side for a fresh supply of embers.

Fire Management During a Long Cook

A rotisserie cook needs a steady, consistent heat source rather than a single large fire. Build your ember bed in the brasero first, then transfer a measured amount beneath the spit. The Asado Coalstopper keeps the active coal zone directly under the spit and prevents embers from spreading unevenly. Add fresh embers from the brasero side every 30 to 45 minutes to maintain heat without spikes.

The 4-Pack Meat Hooks can be used on the same grill frame alongside the rotisserie for smaller cuts that do not need rotation.
